Course 1

Sweet & Sour Squirrel Fish

A whole fish is scored into a crisscross pattern so it opens up like a flower when fried, then turned golden and crunchy and finished with a glossy, bright red sweet-and-sour sauce. Crisp outside and tender inside, with a tangy-sweet glaze that soaks into every ridge. It’s a showpiece dish that always lights up the table.

Spicy Boiled Fish

Silky slices of fresh fish are poached in a rich, deep red chili broth, then topped with dried chilies, Sichuan peppercorns, sesame, and cilantro and finished with sizzling hot oil. Each piece is tender and smooth, wrapped in a numbing, fiery heat. Choose two kinds of fish to make the bowl your own.

Course 3

Hunan-Style Spicy Shrimp

A Changsha late-night favorite: a big bowl of shellfish stir-fried in a hot wok with chilies, garlic, and fragrant spices until the shells turn a deep, glossy red. The spicy, savory sauce clings to every piece, so peeling them is half the fun. Grab a few friends and dig in with your hands.

Real Hunan Fire,
Honest Home-Style Cooking

At Pot Master, flavor begins with how we cook. Our chefs work with high flames and fast hands, so each stir-fry keeps its crisp bite and smoky “wok hei.” We pickle our own chopped chilies, braise our meats slowly in house spices, and balance every dish with sour, savory, and spicy notes the way Hunan families have for generations. Whether it’s a simple plate of greens or a whole fish for the table, we cook it fresh and cook it right.

A fresh twist on the classic Hunan pounded eggplant. Blistered green chilies and soft eggplant are paired with creamy avocado and crunchy peanuts, then dressed at the table with a savory chili sauce. Smoky, creamy, and gently spicy all at once.

Mao’s Style Braised Pork Belly

Hunan’s most famous comfort dish. Cubes of pork belly are slowly braised with caramelized sugar, soy, chilies, and warm spices until glossy, deep amber, and melt-in-your-mouth tender. Rich but never greasy, it’s best spooned over a bowl of hot rice.
